What cognac casks do to an espresso

Our signature Malmaison Roast begins with French oak cognac casks. Before roasting, the coffee rests in the oak, and the cask leaves its character on the beans.
From there it is roasted in small batches here in Alabama. The result is the espresso we pour at the counter on Dauphin Street — one of real depth, made to be taken slowly.
You can taste it at the café, or take it home as whole bean. Either way, it is the cup the house is built around.
